Ingredients

    14.5 ounces of Dice tomato's...any flavor
    1 teaspoon Garlic
    12 ounces of Chicken...boneless & Skinless
    2 cups of Cabbage, shredded
    1 cup Onion, diced
    16 ounce Chipotle & Garlic Salsa
    5 tablespoon Extra Virgin Olive Oil
    1 cup Cheese, shredded...any flavor
    5 medium White Corn Tortilla's

Directions

Take a cassarole dish and spray with cooking spray. Set aside
Set oven to 350 degrees
In a large skillet pour 3 tablespoons of Extra Virgin Olive Oil into pan.
You want to hear a sizzle when adding in ingredients.
Add chopped onion, shredded cabbage, Chicken, garlic, tomato's, and salsa. Cook until warm and veggies are tender.
In a different skillet add 2 tablespoons of extra virigin olive oil. Needs to be hot.
Please be careful when doing this. Gently add one corn tortilla, flip when it starts to rise and take out & place in cassarole dish. This should take about 3 min or so. Do this to 3 tortillas and lay in dish.
Add your mixture on top of tortilla's. If the tortilla's overlap, that's ok.
Then add 1/2 cup of shredded cheese.
Do 2 more corn tortilla's in olive oil and place on top of mixture...we're layering.
Add the remaining mixture and the other 1/2 cup of shredded cheese.
Place in oven and cook for 10 to 15 min.

Makes 10 servings.
