    6 Chicken Thighs (boneless/skinless)
    1 large Jalepeno or Hatch Chili
    1/4 Large White Onion
    1 Cup Long Grain Brown Rice
    1 Can Campbell's Health Request Cream of Mushroom Soup
    5 Medium sized button Mushrooms


Spray 2 quart casserole with non-stick cooking spray.
Put rice, 1 cup water and thinly sliced mushrooms into casserole.
Cut chili and onion into long slices. Roll chicken thighs around chili and onion slices and lay on top of rice.
Dice any remaining chilis and onions. Mix with soup and 1/2 additional cup water.
Pour over chicken and rice.
Add ground pepper on top if desired.
Bake covered at 375F for approximately 90 minutes and then uncover for last 30 minutes (or until liquid is absorbed by rice).
Serve with steamed vegetables or salad.
Serves 4 to 6 as a main course.
