Introduction
I'm a firm believer that the more that goes into the chili pot-- the better it is for you! Especially in fall after a day spent in the chill doing yard work. Try serving it with baked tortilla chips, some shredded cheddar sprinkled on top and a dollop of sour cream. Yum. And it freezes like a dream. Ingredients

1 tbsp olive oil
2 onions, chopped
5 cloves garlic, minced
1 lb. extra lean ground beef
3 tbsp bouillion cordial or 3 cubes, crumbled
6 tbsp. chili powder
5 tbsp. ground cumin
2 tsp. ground cinnamon
3 tsp coarse sea salt
1 tsp black pepper
1 tbsp worchestershire sauce
1 bottle dark beer
1 28 oz. can diced tomatoes
1 28 oz. can crushed tomatoes
1 28 oz. can red kidney beans, rinsed and drained
1 14 oz. can chickpeas, rinsed and drained
4 medium zucchini, chopped
2 large green peppers, chopped
Tips
NI is per cup. Makes about 4 quarts total.
Directions
Heat the oil and fry the onions, beef and garlic on relatively high heat until the beef is all browned. There shouldn't be anything to drain with extra-lean meat, but if there is, do that now and return to the pot.
Pour in the beer and let it reduce, while its boiling add all the spices and bouillon.
Add the tomatoes and beans. Stir and bring to a boil.
Add the chopped veg, return to a boil and lower heat to medium-low. Let the whole thing stew for at least 1 hour, stirring occasionally. Serves 12.
