Ingredients

    1 small onion
    2 cloves minced garlic
    1 T olive oil
    1 jalapeno, minced
    4 oz. can diced green chilis
    1 t pwd. cumin
    1/2 t dried oregano
    1/8 t cayenne
    1/2 t salt
    1 1/2 C chicken broth
    1 can white beans, drained
    8 oz chicken breast dieced
    1/4 C chopped fresh cilantro
    1/2 C shredded Mozzarella Cheese

Directions

Saute onion and garlic in olive oil in soup pot until tender. Add Jaleapeno, chiles, cumin, oregano, cayenne, and salt. Saute another minute. Stir in chicken broth, beans and chicken. Bring to a boil. Cover and simmer 25 minutes. Stir in cilantro and cheese and serve.
