Ingredients

2.5 oz of pork tenderloin
1 Tbsp olive oil
Butternet squash, 1/2 cup small slices (1-2", 1/4 inch thick)
Chicken broth, 1/2 cup
Chopped onions, 1/3 cup
Curry Powder, 1/2 tsp
Chili Powder, 1/8 tsp
Directions
Preheat your oven to 400 degrees.
Heat the oil in a small saucepan. Add the pork and cook for 1-2 minutes on each side, until browned but not cooked all the way through. Remove pork and set in a baking dish.
Add butternut squash and onions to the saucepan now, and sautee in the remaining oil for approximately 3 minutes. Add the chicken broth and spices and bring to a boil. Reduce heat, cover, and simmer for 10 minutes.
Pour the mixture from the pan over the pork, and place the baking dish in the oven. Bake at 400 degrees for fifteen minutes. Then enjoy!
