Ingredients

* 2 Cups of Prepared Brown Rice
* 3 tbsp Olive Oil
* 1 Egg
* 1 Large Green Onion
* 1 Medium Tomato
* 1/2 Cup Firm Tofu (optional)
* 1 Large Avocado
* 1/2 Cup of Chopped Cabbage
* 1 Tbsp of Soy Sauce (Optional)
* 1 Chinese Fried Rice Seasoning Packet
Directions
1.) Prepare the brown rice ( I cheat by using instant)
2.) Chop the green onion and a 45 degree angle, Chop the cabbage, tomato, avocado and tofu
3.) Place the tofu in the over on broil for 10 minutes to brown
4.) In a wok add the oil and the cabbage and green onions, stir fry on med-high for 1-2 mins
5.) Add the rice and stir until the rice is warm
6.) Push rice to the sides of the wok and scramble and egg in the middle
7.) Add the tomato, tofu and avocado seasoning packet and soy sauce
8.) Let all ingredients cook on low for 3-5 mins
9.) Enjoy!
