Ingredients

    2 Eggs
    2 Egg whites
    1/4 cup spinach, frozen, thawed and drained
    1 medium Tomato
    1 oz. Reduced fat or fat free feta cheese
    1 tbsp Olive oil

Directions

Per omelet take 1 whole egg and 1 egg white and beat until well blended. Divide spinach into two halves, dice the tomato, remove insides. Crumble feta cheese.
Heat skillet with olive oil (1/2 tbsp per omelet) then pour in eggs. When eggs are set, add tomato, spinach and feta cheese. Fold omelet over and turn once.

    Very Good
    I made this as a dinner entree using egg substitutes (DH has high cholesterol) and we both like it a lot. Nice variation on the classic omelet! - 10/17/07
