Introduction

This is an easy and refreshing salad, with an unexpected mixture of tastes and textures. This is an easy and refreshing salad, with an unexpected mixture of tastes and textures.

Ingredients

    1 medium (about 1 lb) jicama, peeled, thinly sliced
    1 bunch asparagus, blanched, trimmed and bias cut
    1 sweet red pepper, cored, 1-inch dice
    1 large can of sweet corn
    5 Tbsp Balsamic Vinegar and Oil dressing

Directions

1. Blanch asparagus in boiling water for about 45 seconds, then cut into bias-cut pieces

2. Combine all vegetables

3. Toss jicama, asparagus, red pepper, and corn with dressing.

Serve well chilled
