I made this up as I went one day, to use up some mushrooms before they went bad. I made this up as I went one day, to use up some mushrooms before they went bad.
Number of Servings: 4


    1 lb. chicken breasts, cut into strips
    1/4 cup light butter
    4 green onions, with bottoms sliced and tops in 1" strips
    1 small clove garlic
    salt and pepper
    1/4 t. marjoram
    1/4 t. basil
    8 oz sliced mushrooms
    1/3 cup white wine
    1 T. cornstarch
    2/3 cup nonfat milk


Sautee the chicken strips and green onion bottoms in the butter, reserving the tops for later. Season with salt and pepper to taste. When chicken is done, add mushrooms, marjoram, and basil, and sautee until mushrooms are tender. Mix cornstarch with wine, add to pan, and stir until it simmers. Add milk, stir well, and heat through. Throw in green onion tops and stir just until wilted.

This is good served over whole wheat pasta.
