    4 cups low-fat chicken stock
    2 cups water
    6 cloves garlic, minced
    2 pounds kale, chopped into bite size pieces
    1 16 oz. (about) can cannellini beans, dreained and rinsed
    2 tablespoons olive oil
    4 tablespoons grated parmesan cheese


Heat the oil in a large soup pot and sauté the garlic until golden. Add the kale, stirring for about 3 minutes, until well coated with the oil and beginning to wilt. Cover the pot, reduce the heat and simmer about 30 minutes.

Place about half of the cannellini beans into a food processor with 3 tablespoons of water and blend to a creamy consistency. Stir the whole beans and the blended beans into the soup; heat until warmed through. Serve, garnished with the
