Ingredients

    2 cups cooked brown rice
    1-15 oz can of black beans or pinto beans, drained and rinsed
    1 cup corn kernals
    1 cup chopped red bell pepper
    1 can Rotel tomatoes, choice of variety (tomatoes with chilis)
    1/2 jalepeno, chopped (optional)
    1/2 cup chopped cilantro
    juice of 1 lime, about 2 TB
    2 TB white or red wine vinegar
    1 tsp cumin
    1 tsp chili powder


Directions

Cook rice. Mix vinegar, lime juice and other seasonings. Add other ingredients and mix.
makes 10 - 1/2 cup servings.
