Great appetizer for Ramadan Great appetizer for Ramadan
Number of Servings: 8


    1 cup lentils
    2 TBSP rice
    6 cups water
    1/2 tsp salt
    1/2 tsp cumin
    1/4 tsp allspice
    1 chopped onion
    1 TBSP oil
    1/4 cup chopped parsley
    Juice of one lemon (opt)


Place lentils, rice and water in a large saucepan and boil 1 hour or until soft. Transfer to a blender and process, if desired. (Or you can gently mash the lentils with a potato masher) Place back into pan and add allspice, cumin and salt and simmer. Meanwhile, fry onion in the oil in a small frying pan until the onion is soft, but not brown; add to soup. boil 10 more minutes. Add parsley and lemon juice, remove from heat and serve.

Yields 8 one cup servings

I use more like 1 tsp of cumin--we like the flavor.

  • i liked it as a soup but loved it when i addedlots of garlich(i am a garlich fan)and reduced it rightdown,purreed it all after the onions were in and had it like a dip similar to humus.it was also nice that way as a sauce accoplishment to baked fish.just added a bit of coriander to it for the fish . - 8/15/09
