    1 c. onion, chopped
    1 c. yellow squash, sliced
    1 c. zucchini, sliced
    1 tomato, chopped
    Italian seasonings, to taste
    Pepper to taste
    2 t. reduced fat parmesan cheese


Preheat oven to 450 degrees.

Tear 2 pieces of foli (approx. 18x24 inches). Place half the onion in center of each piece of foil, top each with half of the squash, half the zucchini and half the tomato. Sprinkle with seasoning and pepper. Bring up foil sides. Double fold top and ends to seal making a packet, leaving room for heat circulation inside. Bake 18 to 20 minutes on a cookie sheet. Remove from oven, open packet carefully and sprinkle vegetables with cheese. Let stand about 3 minutes until cheese melts.
