Introduction

Ingredients

2 teaspoons Olive Oil
1 lb ground Turkey (Extra lean)
1 onion chopped
1 28 ounce can of diced tomatoes
1 19 oz can italien tomatoes (optional)
1 6 oz can of tomato paste
1/4 cup of grated parmeasean cheese
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon of sugar
1 box (454 gm) smart pasta (I use penne)
1 cup frozen sweet summer peas
1 cup part skim shredded mozzarella cheese
Directions
Makes 6 large portion or 8 smaller portions
1. Preheat oven to 350 F
2. In a large nonstick saucepaun or dutch oven, heat the oil. Add the turkey and onion; cook, stiring as needed, until the turkey is browned and the onion is softened, about 5 minutes.
3. Stir in the tomatoes, tomato paste, parmesan cheese, basil, oregano, and sugar; bring to boil. Reduce heat and simmer uncovered, until the flavours are blended, about 5 minutes. (Do NOT omit sugar)....
4. At the same time cook box of pasta a little on the al dente side. Drain and set aside.
5. Mix together pasta, peas and meat mixture. Place mixture in a 9 x 13 casserole dish, sprinkle mozzarella cheese over top of pasta mixture.
6. Bake in preheated oven for 30 minutes or until cheese is golden and pasta is bubbling.
Let cool 5 minutes and serve with your favourite salad.
