Introduction
I used this recipe many times and it has helped me alot when my kids were still at home. I used this recipe many times and it has helped me alot when my kids were still at home.Number of Servings: 3
Ingredients

1 egg
1 cup all purpose flour
3/4 cup milk
2 TBS Shortening melted or canola oil
1 TBS sugar
3 tsp baking powder
1/2 tsp salt
1/2 cup fresh or frozen blueberries (thawed and well drained.)
Directions
Beat egg with hand beater until fluffy; beat in remaing ingredients just until smooth. For thinner pancakes, stir in additonal 1/4 cup milk.
If you want blueberries add them now.
Grease heated griddle if neccessary. (To test griddle, sprinkle with few drops water. If bubbles skitter around, heat is just right.)
Pour about 3 TBS batter from tip of large spoon or from pitcher onto hot griddle. Cook pancakes until puffed and dry around edges. Turn and cook other sides until golden brown.
About nine 4-inch pancakes. Serves 3 adults.
