Even my hubby who doesn't like chicken loves this recipe. Even my hubby who doesn't like chicken loves this recipe.
Number of Servings: 8


    4 chicken breasts boneless, skinless
    1 med onion chopped
    2 red bell peppers chopped
    1 13.25oz box of 7 grain pasta Fusilli
    1 pkg sliced baby portabellas
    1 16oz jar tomato/marinara sauce
    1 cup sour cream (fat free)
    1 cup parmesan cheese


Preheat oven at 350.
Put the pasta to boil till still a bit firm. Drain set aside.
While pasta is boiling chop chicken into bite size pieces cook with onion until nearly done. Add red pepper and mushrooms and cook for a few more minutes, until peppers are softer but still crunchy.

Stir all of the ingredients together leaving a bit of cheese to top it.

Pour into a casserole pan and top with cheese. Put into oven for 10minutes or until nice and bubbly and cheese is nice and brown.

Makes 8 2cup servings
