Number of Servings: 10


    6 large tomatoes
    3-5 green/red peppers
    1 onion
    3 medium sized summer squash
    2 6oz cans tomato paste
    4 T molasses ( you may substitute whatever sweetener you like- I need the extra iron)
    4 cloves garlic
    3 T olive oil
    water as needed


Saute diced onion, pepper and garlic in large pot. Add summer squash (run through a food processor or dice well)-cook until mostly tender. Add chopped tomatoes. Simmer 30 minutes. Add tomato paste. Stir well. Add water until reaching a slightly runny consistency. Add molasses. Season to taste with whatever seasonings you have available- I used a few fresh basil sprigs. Cook down until desired thickness. Serve over pasta/rice/or baked summer squash. Makes 8-10 one cup servings.
