    1/4 cup smart balance lite
    1 cup plus 2 T sugar, divided
    2 eggs
    1 t vanilla extract
    2 cups all-purpose flour
    1 t baking powder
    1/2 t baking soda
    1/2 t salt
    1 cup 1% buttermilk (or do like I did and make "sour milk" - add 1 T of white vinegar to a 1 cup measure, then fill it the rest the way with milk, wait 5 minutes and voila cheap buttermilk)
    1 t ground cinnamon


In large mixing bowl, beat smart balance until light and fluffy, about 1 minute. Gradually beat in 1 cup of sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla. In a separate bowl, combine the flour, baking powder, baking soda, and salt. Add to creamed mixture alternately with butermilk just until mixed.
Transfer half of the mixture to a 9x5x3" loaf pan coated with non-stick cooking spray. Combine cinnamon and remaining sugar. Sprinkle three-fourths of mixture over batter. Top with remaining batter and sprinkle with remaining cinnamon mixture.
Bake at 350 for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to wire rack to cool completely.
Makes 14 slices, 1 slice = 1 serving
