Number of Servings: 4


    4 chicken legs, skinned
    1 Tbl curry powder
    dash salt
    2 Tbl oil
    3 leeks, washed, split lengthwise then sliced
    1 can low sodium chicken broth
    1/2 c dry white wine
    1 C lentils, rinsed and drained
    1 Tbl grated fresh ginger
    1 can mandarin oranges, drained
    dash black pepper


Heat oil in large skillet. Rub both sides chicken legs w/curry powder and sprinkle lightly w/salt and pepper. Brown chicken on both sides over medium heat.
Trim tops and roots and from leeks. Split lengthwise and wash thoroughly to remove sand. Slice crosswise.
Remove chicken from pan and add leeks. Saute 2-3 minutes until softened. Add chicken broth, wine, ginger and lentils. Add chicken and oranges. Bring to bring to boil. Reduce heat, cover. Simmer 50 minutes, or until lentils are tender.
Makes 4 servings.
