    2 tsp Extra Virgin Olive Oil
    4 (8 oz) Chicken breasts, no skin
    1/2 cup Onion, finely chopped
    1 clove Garlic, mince
    1/2 cup Walnuts, finely chopped
    2 TBSP All Purpose Flour
    1/2 tsp Ground Cinnamon
    1/4 tsp Red Pepper Flakes
    1 - 14 oz can Chicken Broth, fat free low sodium
    2 TBSP Dried Parsley (if using fresh - 1/4 cup)
    3 TBSP White Wine
    1/4 tsp Salt
    1/4 tsp Pepper


Makes 4 servings
1 serving = 1 chicken breast 1/2 cup sauce

Heat oil in large non-stick skillet. Add chicken, cook 3 mins on each side or until brown. Remove from pan.
Add onion & garlic to pan, cook 2 mins or until tender, stirring constantly. Add walnuts, cook 1 min or until toasted & fragrant, stirring constantly.
Combine flour, cinnamon and red pepper in a small bowl & sprinkle over walnuts, stirring to coat. Add chicken broth, stir with whisk.
Return chicken to pan. Cover & simmer 15 mins or until chicken is done & sauce is slightly thick.
Stir in parsley, wine, salt & pepper.
