Introduction

Vegetable quiche cups perfect for breakfast and freezable. Vegetable quiche cups perfect for breakfast and freezable.

Ingredients

    4 egg whites, 1 egg yolk, 1/3 cup chopped onions, 1/3 cup chopped red peppers, 1/3 cup chopped spinach (yield after defrosting from frozen), 1/4 cup chopped mushrooms, 1/4 cup reduced fat colby jack shredded cheese

Directions

Place 12 cupcake foils on a baking sheet and spray with no-stick spray. Preheat oven to 350 degrees. Beat egg whites & egg yolks in large bowl. Add salt & pepper to taste. Defrost frozen spinach, "wring" out, and add to egg mixture. Add all remaining ingredients to egg mixture. Stir well and spoon evenly into cupcake foils. Place in oven and bake for 20 minutes, until toothpick comes out clean.
