Ingredients

    3/4 cup ground flax seed
    1 cup whole wheat flour
    1-1/4 cups oat bran
    1 cup brown sugar
    2 tsp. baking soda
    1 tsp. baking powder
    1/2 tsp. salt
    2 Tbsp. cinnamon
    1-3/4 cups shredded carrots
    1-3/4 cups shredded apples
    1/2 cup walnuts, chopped
    1/2 cup raisins
    1 cup buttermilk
    2 eggs
    1 tsp. vanilla

Directions

Preheat oven to 350 degrees. Mix dry ingredients together. In another bowl, whisk together eggs, buttermilk and vanilla. Put all ingredients into the same bowl and mix until everything is moist and fruit and nuts are evenly distributed. Divide into 23 greased muffin tins. Bake for about 20 minutes or until done. Makes 23 muffins.

    Incredible!
    For gluten free muffins, substitute Almond Flour for the Whold Wheat flour. This are so yummy and so good for you. - 7/18/13
