Introduction

Vegetarian meatballs that can be served as an appetizer or a main dish. Be sure to use dry bread crumbs because if you use fresh the meatballs will be mushy. I've also replaced 1/2 cup bread crumbs for 1/2 cup ground flax. Vegetarian meatballs that can be served as an appetizer or a main dish. Ingredients

    4 med. eggs
    1clow fat cheddar shredded
    1/2 c fat free cottage cheese
    1/2 cup minced onion
    1c finely chopped pecans
    1tsp basil
    1 1/2 tsp sea salt
    1/4tsp sage
    2 c dry bread crumbs

Directions

Combine all ingredients and form into 2 inch balls. Place in 9 X 13 baking dish and bake uncovered at 350 degrees F for 35 - 40 min. You can bake with a sauce of your choice.
