Ingredients

    2 tbsp olive oil, divided
    1 lb beef cut in 1-inch chunks
    1 cup onion, chopped
    2 red tomatoes, chopped
    1 cup carrots, chopped
    2 cloves garlic
    2 potatoes, baked or parboiled, in 1-inch chunks
    2 cups beef broth
    1 tsp curry powder
    1/2 cup non-fat sour cream

Directions

1. Brown beef in 1 tbsp olive oil, remove
2. Sautee onion, tomato, carrots, and garlic in 1 tbsp olive oil until soft.
3. Add beef and potatoes. Stir in broth and bring to a boil.
4. Add curry (more to taste if desired)
5. Simmer 20-30 minutes.
6. Stir in sour cream and heat through.
