    4 medium ripe tomato
    2 tbsp Olive Oil
    1 1/3 tbsp Parmesan (finely grated)
    3 garlic cloves, finely minced
    3/4 cup chicken broth
    1/4 cup uncooked brown rice


Bring chicken broth, olive oil and rice to a boil in a covered pot. Add finely minced garlic and reduce to simmer according to the rice package instructions.

Turn oven on to broil. Make sure your top rack is in a position for broiling (up high)

Slice off the top of the tomatos (1/4 - 1/2 inch), set aside. Hollow the tomato with a mellon baller or small spoon (save the pulp for other uses), leave about 1/2 inch of pulp around the edge of each tomato. Prepare a baking dish by lining with aluminium foil. Place tomatos into the dish.
Fill each tomato with 1/4 cup of the cooked rice mixture, then top each tomato with 1 teaspoon of parmesan. Broil until tomatos are tender and parmesan is golden brown, about 5 minutes.

Salt/pepper to taste

1 serving = 1 stuffed tomato
