Introduction

Number of Servings: 4

Ingredients

    1/2 cup quinoa, dry
    1 cup water
    zest of half a lemon
    1 Tbsp lime juice
    3 Tbsp canola oil
    1/8 tsp chipotle powder
    1 packet Splenda
    1/4 cup chopped cilantro (or parsley)
    1 cup black beans, cooked
    4-5 sun dried tomato halves, rehydrated and chopped.

Directions

Prepare quinoa according to box instructions (which wll take the cup of water). Set aside. Whisk together lemon zest, lime juice, salt, chipotle powder, Splenda, and canola oil. Pour dressing over quinoa and fold together until the dressing is absorbed. Stir in remaining ingredients, chill and serve. Serves 4
