Introduction

This was always my favorite dinner growing up. Its delicious served with some baked butternut squash! This was always my favorite dinner growing up. Its delicious served with some baked butternut squash!

Ingredients

    10 oz pkg frozen chopped spinach
    5 slices of firm white bread or 1 ¼ c dry bread crumbs
    1 onion chopped
    1 TBLS Oil
    2 eggs
    2 TBLS butter
    ½ c milk
    1/2 t. dried basil
    2 t. salt
    1 t. pepper
    2 lb ground turkey
    2tsp lemon juice
    ½ c kechup

Directions

Thaw spinach. Heat oven to 350. Butter a large baking pan. Chop onion. Cook onion in oil until soft. Whisk eggs with milk, basil, salt and pepper. Add spinach, onion, turkey, bread crumbs and lemon juice. Mix well. Turn the mixture out into a pan and form into 9x5 loaf. Brush with ketchup and bake for 30 min. Melt butter and baste loaf with butter and continue to bake, basting occasionally until well browned, another 30-35 minutes.
