    1/4 c chopped white onion
    1/8 c chopped green bell pepper
    1/8 c chopped red bell pepper
    1/2 c chopped baby portabello mushroom
    1 large egg
    1/3 c shredded colby jack cheese
    1 Tbsp extra virgin olive oil (EVOO)


Spray pan with non-stick. Saute veggies until just loses crispness. If needed add EVOO to pan. Add egg to pan (either scramble, omelet or 'fry') until cooked through.
