Ingredients

    4 cloves garlic
    2 cups canned chickpeas, rinsed and drained
    1 tsp. sea salt
    1/3 cup tahini
    2 Tbs. fresh or frozen (thawed) lemon juice
    1 Tbs. EVOO
    1 roasted red pepper

Directions

roast the red pepper by placing in oven on low broil. Turn to roast all sides of pepper until they are slightly blackened. (you can also do this on an outdoor gas grill.) Take out of oven and place in a zip-lock bag for 20 minutes. Outer skin should peel off easily. Cut into strips.

Place all ingredients in a food processor and blend until well mixed and of a spreading consistency.

Makes 32 servings of 1 Tbs.

Keeps well in the refrigerator in an air-tight bowl.
