    2 c. all purpose flour
    1 1/2 tsp baking powder
    1 tsp salt
    2 tsp olive oil
    3/4 c. milk


Mix together flour, baking powder, salt, and oil. Slowly add the (warmed) milk. Knead for two minutes on a floured surface. Dough should be firm and soft. Place in a bowl and cover with a damp cloth or plastic wrap for 20 minutes.

After the dough has rested, break into eight sections, roll them into balls, and place them on a plate (not touching). Cover with a dish towel or plastic wrap and let rest for 10 minutes. (Don't skip any of the 'resting' steps; they help to give the dough the right consistency).

After dough has rested, place the dough balls, one at a time, on a floured surface, pat it out into a four-inch circle, then roll with a rolling pin into an eight-inch circle. Don't overwork the dough.

Cook the tortillas one at a time in a cast iron skillet heated on high, for about 30 seconds on each side. Keep tortillas covered with a napkin until ready to eat.

Makes 8 tortillas.
