    2 c. rice, cooked
    2 c. sliced mushrooms, favorite kind
    1 c. sliced onions
    1/2 c. pine nuts, toasted
    1 tbsp olive oil
    salt/pepper to taste


In a skillet over low heat, place pine nuts and cook until toasted (when you can smell them) them set aside. Add 1 tbsp olive oil to skillet over med-high heat, adding onions and mushrooms, salt and pepper and cook until tender. When ready, add cooked, warmed rice and toasted pine nuts to mixture and stir until mixed. Then serve. Makes appx 5 1/2 cup servings.
