Great side dish at any meal. Serve it up for breakfast with some eggs for healthy no meat meal.

Ingredients


    2 tablespoons olive oil
    1 cup chopped onion
    8 cups fresh spinach leaves chopped
    2 cups boiled chopped potatoes
    2 tablespoons horseradish
    1 teaspoon freshly ground pepper
    1/2 teaspoon salt

















Directions

Heat oil in a large nonstick skillet over medium heat. Add onion and saute 2 minutes.Add the spinach and cook until slightly wilted. Add potatoes,horseradish,pepper and salt. Stir gently to combine. Spread into an even layer and cook, stirring every 4 minutes or so and returning the mixture to an even layer, until the potatoes begin to turn golden and crispy. About 10 minutes or until desired doneness
