Number of Servings: 12


    2 cups uncooked rice
    24 oz can rotel tomatoes with green chilis
    1 lb bag frozen broccoli
    1 onion, chopped
    2 cans Campbell's Fiesta nacho cheese soup


drain juice from tomatoes into meauring cup. Pour into sauce pan. Add water to total 4 cups. Add 2 cups uncooked rice of choice. Bring to a boil, reduce heat and cover. Simmer until water is absorbed and rice is cooked, stirring occassionally.

In large pot, saute chopped onions about 3 minutes. Add broccoli. Cover and allow to heat about 5 minutes. Add tomatoes. simmer on low until rice is done.

Add rice to vegetables. simmer together about 5 minutes. Remove from heat.

Add cheese soup and mix thoroughly.
