    1 lbs. fresh spinach
    1 Tbsp. Olive Oil
    4 cloves garlic, minced
    2 cups chicken stock (I've used my own turkey as well)
    1 cup cooked diced potato (I left skin on)
    1/4 cup fresh dill chopped
    1/2 tsp salt
    1/2 tsp. pepper


Cook garlic in oil on med heat for 1 min. add spinach and cook 5 min. til wilted on high heat.
Transfer spinach to blenderand add stock and puree til smooth
Add potatos, dill, salt, and pepper and puree briefly til smooth. Add more stock if too thick.
Heat to serve/
Makes 4 servings 4gm fat, 8g. Carb.
**I add some Vegatable Seasoning from Club House "La GRille" and some Cayanne Pepper .
