Number of Servings: 4

Ingredients

    1 pound sweet potatoes, peeled and sliced
    1/2 tsp finely shredded orange peel
    1/2 cup orange juice
    1 tbsp molasses or brown sugar
    1/4 tsp salt
    1/4 tsp ground cinnamon
    1/8 tsp ground allspice

Directions

In a large skillet bring 1 inch of water to boiling. Add sweet potatoes, reduce head. Cover and simmer for 20 mins or till tender. Drain well.

Meanwhile, for sauce, in a small bowl, combine the rest of the ingredients. Pour over potatoes in skillet. Cook and stir gently til bubbly. Simmer, uncovered, for 5 minutes r til potatoes are glazed, spooning sauce over potatoes occasionally.

    Very Good
    I 'd make this again, but probably leave out the orange rind because the dish had a strong orange flavor. I find the New Dieter's Cook Book has many delicious & healthy recipes which may be made so as to have less calories/sugar by using a sugar substitute. - 3/17/09
