Ingredients

    1 mango, peeled and coarsely chopped
    1 cup cooked black beans, or canned beans, rinsed and drained
    2 green onions, finely sliced
    1 tablespoon serrano/jalepeno pepper, seeded and finely diced
    1/4 cup fresh lime juice
    2 tablespoons olive oil
    2 tablespoons honey
    1/4 cup chopped cilantro (if dried, then 1 tbsp)
    Salt and freshly ground pepper, to taste

Directions

1. Peel and chop the mangos
2. Rinse and drain canned black beans
3. Finely slice scallions
4. Seed and finely dice the hot pepper
5. Squeeze limes
6. Mix together in a bowl; add salt & pepper to taste

Serve over rice or as a side dish.
