    2 medium chicken breasts, cubed

    1 28 oz can seasoned diced tomatoes

    2 oz tomato paste

    2 T. BBQ sauce, your choice

    1 t. packed brown sugar

    3-4 medium shallots, diced

    Yellow or orange bell pepper, diced

    1-2 cups cremini mushrooms, sliced thickly


Combine all ingredients in a slow cooker on low heat for 5-6 hours.

If the cacciatore seems a little thin, add a slurry of water and cornstarch.

Serve over pasta or rice!
