Note: Do not use real butter for this recipe. It does not work well. If you must, choose smartbalance or margarine.

Ingredients

    3/4 cup Earth Balance buttery spread, melted
    1 cup brown sugar
    1.5 tsp Ener-g egg replacer (mixed in 2 TB water)
    1/4 cup molasses
    1 cup whole wheat flour
    1 cup white flour
    1.5 tsp baking soda
    1/2 tsp salt
    2 tsp ground cinnamon
    3/4 tsp ground cloves
    3/4 tsp ground ginger
    1 tsp vanilla extract
    1/3 cup sugar, kept separate (I used raw)

Directions

Makes 32 cookies

Mix "butter", sugar, vanilla, and egg replacer until creamy. Stir in molasses until the color is uniform.

In a separate bowl mix flour, soda, salt, cloves, ginger, and cinnamon. Blend flour mixture into molasses mixture.

Chill dough in the freezer for 1 hour.

Roll dough into walnut sized balls, then roll in separate sugar. Place on ungreased cookie sheet.

Bake at 375 degrees for 8-12 minutes. Watch the cookies closely after 7 minutes and remove once tops are cracking.
