It's a Christmas Eve tradition in my family & is so hearty and delicious. I've lightened it up by using leaner beef & bacon. When my mom was growing up, her mother (my grandmother) got this recipe from their next-door neighbor, Evelyn. Hence the name!

Ingredients

1/2 pound lean beef
6 slices Oscar Mayer Center Cut Bacon (or any bacon that yields 3 slices for about 60 calories), cut into 1/2 inch pieces
Onion, chopped, if desired
2 cans condensed tomato soup
2 cans sliced white potatoes
1 can kidney beans, drained
Directions
In large skillet, cook bacon until crisp. Remove from pan and drain drippings. Add diced onion and beef to same pan and cook until beef is browned all the way through. Add bacon back in.
Stir in soup, drained beans, and drained potatoes. Heat through. Serve!
(Alternative: mix in a casserole dish and bake at 350 for approx. 20-25 minutes).
Makes approx. 6 one-cup servings.
