Ingredients

    1 tbsp olive oil
    1 6 oz can tomato paste
    2 28 oz cans diced plum tomatoes
    1 54 oz can tomato juice
    1 lg onion chopped coarse
    3 cloves garlic chopped course
    1 jalapeno pepper, ribs and seeds removed as desired
    1/4 c. parmesan cheese, grated
    handful of fresh basil
    2 tsp salt
    1 tsp black pepper
    3 tsp sugar

Directions

Makes 4 quarts sauce - 32 1/2-cup servings.

Heat olive oil in large stock pot, add tomato paste and saute until fragrant. Using blender, puree plum tomatoes, garlic, onion and jalapeno peppers. Add pureed tomato mixture along with tomato juice to stock pot and stir until combined with tomato paste. Add fresh basil, spices and parmesan cheese. Bring to a boil, stirring often, then reducing heat to minimum. Simmer until sauce has thickened, stirring occaisionaly - about 3-4 hours. Remove basil leaves. Serve over pasta. Extra sauce can be frozen or preserved in canning jars.
