Taste like home Mac & Cheese.
This is a lighter version of the high calorie stuff my mom used to make.

Number of Servings: 4

10 oz. Ronzoni Smart Taste Elbow noodles
8 oz. Tillamook Colby Jack Cheese
    4 fl oz. Evaporated Milk
    5 Ritz Crackers

Boil Noodles.
Thinly slice 8 ozs of cheese from the block (making sure you have enough to layer the bottom of your pan twice.)
Place a layer of cheese at the bottom of your baking dish. (I use aluminum baking trays for easy clean up)
Drain and pour noodles into baking dish.
Add second layer of cheese to top of noodles.
Crumble across the top of cheese the five Ritz Crackers.
Pour in the 4 fl ozs of evaporated milk.

Bake at 350 degrees for 12-14 minutes.

Good recipe, but I changed some things. I made a white sauce & once it thickened I turned off the heat & added my leftover shredded cheddar cheese (I only had 4 oz.) I mixed mac., sauce, & a 1/2 c. of milk. I kept about 3 T. of cheese & mixed with crumbled saltines, & parm. cheese for topping. - 6/9/10
