Introduction

Ingredients

    1 lb. (less or more is ok) of left over chicken breasts (boneless/skinless) diced in bite size pieces.
    6 oz. sliced portabella mushrooms (again, you can add more or less.)
    3 cloves of fresh minced garlic (less if you prefer)
    1 pkg. Of Knorr-Lipton Rice Sides in Mushroom, Chicken, or Creamy Chicken Flavor. Use less garlic with the chicken varieties because it tends to be to over powering.
    1 TBS extra virgin olive oil
    1/4 Cup Chicken stock ( or less)

Directions

This recipe makes 4 equal servings.

1. First sautee sliced mushrooms in 1 TBS EVO and 1/4 Cup chicken stock, add minced garlic at the very end, be careful not to over cook! Just cook until outside starts to turn rich brown, and the mushrooms start to become more tender, remove from skillet set aside.
2. Make rice in same skillet as directions indicate.
3. Add cubed chicken, mushrooms and garlic back to pan during the last three minutes of the rices indicated cooking time.

Serve with vegetable of your choice!

    made a nice change to use up chicken like this. I usually make a curry. Will have this from time to time for a change - 9/14/09
