Like a baked rice pudding but with quinoa.
Good for breakfast or dessert.

Ingredients

    2 c quinoa prepared (2c H2O/1c quinoa)
    5 large eggs from pastured chickens
    3/4 c organic sugar
    1 dash salt
    1T vanilla extract
    2.5 c 1% milk

Directions

combine eggs, sugar, salt, & vanilla extract in casserole dish with whisk.
add milk, whisk again.
add prepared quinoa
bake at 350 for 20 min or until set
