    1 tbsp olive oil
    1 medium onion, chopped
    2 carrots, finely chopped
    2 celery sticks, finely chopped
    1 small potato, finely chopped
    1 tsp grated ginger
    1 tsp oregano
    1 tsp cumin
    1 tsp turmeric
    1 tsp sea salt
    1 cup lentils
    1 bay leaf


sautee onion, carrots and celery in olive oil.
Add lentils, potato, and spices and bay leaf
Bring to a boil, then lower heat to simmer.
Simmer lentils soft.
