    4 eggs
    2 egg whites
    1 cup baby spinach, chopped
    1/4 cup scallions, chopped
    1/2 cup shredded soy cheese, cheddar flavor
    1/4 tsp salt
    1/4 tsp pepper


Heat oven to 400.

Beat eggs & egg whites in a bowl. Mix in spinach, scallions, cheese, salt & pepper.

Heat a 12-inch skillet; spray with Pam. Pour mixture into skillet and cook over medium-high heat for 5-8 minutes, until edges are set.

Transfer skillet to oven; bake until top sets - approx 5 minutes. Enjoy!
