Ingredients

    I large potato cubed
    I cup carrot choped
    2 cups brocolli chopped
    1/4 cup celery chopped
    1/4 cup onion chopped
    1/2 cup Nonfat milk
    1/4 cup cheddar cheese shredded
    4 cups water
    4 chicken boulion cubes
    pepper to taste

Directions

Cook potato, carrot, brocolli, onion, and celery in water until tender. Remove 1/2 cup of mixture and mash, add cheese and milk. Return to pot. Add bullion cubes and pepper. Simmer for 10 minutes.

    It was very windy and cold today, so warm soup hit the spot. I should have tried dipping hawaiian bread in it like someone below said, that would have been good too. :) - 1/1/12

    i loved this recipe, it was so easy (quick)and so so YUMMY, my two year old LOVED it, she ate two bowls and she is a very picky eater.... I would recommend this to anyone, i recommended it to her daycare!!!!!!!!!!!!! We also ate ours with the Hawiian style bread, she loved dipping the bread in it... - 9/1/09
