Ingredients

    potatoes, cheese sauce, cauliflower, mushroom, tofu

Directions

Peel potatoes and par-boil, steaming sliced cauli above potatoes.

While they're parboiling/steaming, make up a white sauce by melting the butter in a pan, slowly adding the flour, then, when the resulting mixture is nut-brown, slowly add the milk, stirring all the time to ensure no lumps develop. Add the teaspoon of mustard, the grated cheese, and pepper to taste.

Once the potatoes and cauli are done, slice the potatoes, making a layer at the bottom of a casserole dish. Add some cheese sauce, then layer the cauli, sliced tofu and sliced mushroom on top. Finish off with a final layer of potato and the majority of the cheese sauce. Bake in a 200 centigrade oven for 40 minutes, with a lid on.
