    3 lbs. Chicken Breasts, boneless and skinless
    1 can Tomato paste, no salt added
    2 cups water
    3 scallions, chopped
    1 clove garlic, minced
    2 tbsp basil


In a deep skillet brown chicken on all sides. Mix tomato paste with water and add to chicken. Add scallions, garlic, and basil. Turn heat down to low and let simmer for 2 1/2 to 3 hours, checking and turning chicken. If needed, add a little more water. Makes 4 to 8 servings depending on size of chicken.
