Number of Servings: 8


    1 pound ground vension
    1 small onion, chopped
    1 carrot, shredded
    1 7 1/2 oz. can diced tomatoes, undrained
    1/2 cup water
    1/3 cup uncooked brown rice
    1/2 tsp dried oregano and thyme
    8 medium cabbage leaves
    1/2 c. shredded Swiss cheese
    1 15-oz can tomato sauce
    1 tsp. sugar


Brown venison, onions and carros. Add water, diced tomatoes and rice. Bring to boil, cover and simmer until rice is done. Stir in 1/4 c. of the Swiss cheese.

While mixture is simmering, boil a large pot of water. Parboil 8 cabbage leaves 2-3 minutes (just enough to soften).

When mixture is done, put 1/3 cup on each leaf and roll like an envelope. Put 1/2 tomato sauce (with sugar added) to bottom of pan. Add stuffed cabbage rolls, pour remaining sauce over rolls and bake. When done sprinkle remaining Swiss cheese.
