Ingredients
-
8 tablespoons (1 stick) low fat butter, at room temperature
1 tablespoon minced garlic
1 1/2 teaspoons freshly chopped parsley leaves
1 teaspoon freshly chopped chives
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan cheese (about 1 1/2 ounces)
1 (12 to 14-inch long) whole wheat italian bread cut into 8 slices
Directions
Preheat the oven to 350 degrees F. Line a large baking sheet with aluminum foil and set aside.
Cream the butter, garlic, parsley, chives, salt, pepper, and half of the cheese in a small bowl using a wooden spoon or rubber spatula. Spread each slice of the bread evenly with the garlic butter and top with the remaining grated cheese. Place the bread slices on the prepared baking sheet, and bake until fragrant and lightly golden around the edges, 12 to 15 minutes. (Alternatively, broil until golden brown, 1 to 2 minutes.)
